We already gave you some tips and tricks to get rid of your hangover. But every country has its own traditional dishes to make the process go faster. We like to give you a taste of the international anti-hangover cuisine. This time we explore Columbia’s kitchen with another soup. One with beef for a change, called caldo de costilla.
Now we’re not gonna make any stupid jokes about the white powder, but still Colombians have a certain reputation when it comes to partying. The nights in Bogota can be long and heavy and you might regret them in the morning. Well, until you get a taste of the typical hangover cure: caldo de costilla. And don’t let the exotic name fool you. The ingredients are quite easy to find all over the world.
Ingredients:
Kilo beef ribs
2 large potatoes
2 carrots
2 sticks of celery
1 large onion (or 4-6 scallions)
1 liter beef broth
2 tablespoons olive oil
3 tablespoons coriander (cilantro)
4 tablespoons aji (spicy sauce, if you can’t find it anywhere, you can make it yourself)
Lime wedges
Salt
2 liters water
Preparation:
Take a large pot and heat up the oil inside. Put in the ribs until the meat and bones picked up some color. Than put in the the copped onion and garlic, along with the water, beef broth, aji and coriander. Bring the whole thing to a boil. Afterwards reduce the heat to a simmer and cover the pot. Leave the pot like this for 2 hours, so the meat turns tender.
In the meantime chop up the carrots, celery and potatoes. Put them in the pot and bring to taste with extra salt. Let the soup simmer till the potatoes get tender and serve it with lime wedges as garnish.
It’s also possible to add diced raw onion or chopped coriander.

In Poland we eat pickled cucumbers or drink their brine water – apparently as a great source of Vit C helps for morning tiredness.

Ah yeah… Actually we had that recipe before as Russian recipe. I know it’s very popular in Poland (I tried the homemade ones in your country and they were delicious) and Ukraine too. But Poland already made this category of the blog with zurek!

The cucumbers from Russia are different to those from Poland though – ours are not marinated in vinegar but salt. Try them next time you are there 🙂

It was! I like stews with a bit of wine so it was some kind of new for me and much heavier than what I usually make but I loved it. I added few bay leaves as well and they work perfectly in the dish.
